Bread with Olive Oil, Tomato and Ham
Ingredients (for 4 Persons):
Farmhouse Bread
3 Cloves of Garlic
4 ripe Tomatoes
Serrano Ham
Olive Oil
Salt
Preparation:
Cut the bread in slices of 1,5 centimeters and toast them in the oven. Once the toast is ready the garlic cloves are cut in half and rubbed on the toast so the toast can adopt the taste of the garlic. Then put olive oil on top of this side of the bread.
Remove the green parts of the tomatoes and then put the tomatoes into a mixer. Mix until a smooth mash is generated. Spread the tomato mash over the side of the bread which is covered with garlic and olive oil and put some salt on top. Finally the slices of bread are decorated on a plate and a slice of serrano ham tops each slice of bread.
Avocado with Anchovy and Olive Oil
Ingredients (for 4 Persons):
2 Avocados
Lemon Juice of ½ Lemon
12 Anchovies
Olive Oil
Preparation:
Cut the avocado in two pieces and take out the stone by using a knife (gently chop the knife into the stone, than turn to the side and remove the stone), then take off the skin. Immediately cover the avocado with lemon juice in order to prevent it from turning brown. Cut the avocado in strips of approx. 1cm (6 peaces from each half) and decorate the pieces on a plate. Finally place an anchovy on each slice of avocado and cover everything with drops of olive oil.
Candied Peppers with Olive Oil
Ingredients (for 4 Persons):
2 red Peppers
2 green Peppers
2 yellow Peppers
5 Cloves of Garlic
Olive Oil
Salt
Preparation:
Wash the peppers, take out the seeds and arrange them with the peeled cloves of garlic on a baking tray. Cover everything with olive oil and leave it baking at 90°C for 15 min. in the oven. Once the peppers are cooled down take off the skin and cut them into slices. Arrange the peppers and the garlic on a plate and cover everything with drops of olive oil.
Tartar from Salmon
Ingredients (for 4 Persons):
500g of fresh Salmon
4 Slices of smoked Salmon
2 Spoons of Capers
2 Cucumbers
2 small Onions
Salad
Olive Oil
Parsley
2 Lemons
Tabasco
Salt
Pepper
Butter
Toast
Preparation:
Chop the capers, cucumbers and onions in small pieces. Take off the skin from the salmon, wash the fish and cut it into small pieces. Put the chopped vegetables and the pieces of salmon together with olive oil, parsley, lemon juice and tabasco into a bowl and mix it. Rarefy with salt and pepper.
Cover the slices of toast with butter and put the slices of smoked salmon on top of it, then arrange everything on a plate. Carefully add spoon portions of the salmon tartar on top of the toast with the smoked salmon and put everything for 4 hours into the refrigerator. Before serving on the table decorate the plate with leaves from the salad
